Dorothy Lovett Buckley enjoyed world travel until settling down in the West End over 40 years ago where she and her husband raised their daughter.

She is a Wellness Educator who has taken control of her own health.  Healthy eating is a key aspect of wellness for the individual and the environment and the future of the planet.

Kitchen Safety Rules

  1. Stay in the kitchen when cooking
  2. Watch out for pot handles and turn them inwards
  3. Be careful when using and cleaning knives, and keep them away from the edges of the work surface

Recipes

Falafel
Take box of Sadaf Falafel Mix
(can be purchased at Tangiers)

1. Put falafel in a bowl. 
2. Add water enough to mix.
(If you put in too much water, wait until the water
has been absorbed better. )

3. Drop falafel mix into a pan with olive oil
so that the falafel does not stick to the pan.
4. Cook over low flame and turn to cook both sides.
Spinach Falafel on Green Salad
1. Mix spinach with fresh avocado scooped
from the shell in bite-sized pieces.
2. Add artichoke hearts from glass container
3. Cut up red or green bell pepper
4. Sprinkle olive oil and balsamic vinegar on top.
5. Place falafel patties on top
Spinach salad with mandarins and artichokes
To a bowl of baby spinach salad add mandarins,
artichokes, and walnuts with oil and vinegar
dressing
Acorn squash with pine nut couscous
1. Wash and cut Acorn squash into small
boat shaped pieces; remove center seeds
2. Place in steamer over hot water.
3. Take box of pine couscous.
4. Heat water in small saucepan with spices.
5. Bring to a boil.
6. Turn off heat and remove from burner.
(Directions on package.
7. When Acorn squash is soft enough to be
penetrated with a knife, remove from steamer.
8. Place squash on plate.
9. Sprinkle cinnamon on top of squash.
10. Place couscous on top of small boats of squash.
11. Place cherry tomato in center of each squash.
12. Serve with fresh green salad.
